Leftover Meat Croquettes (Air-Fried) Happy Easter Yall !!!!!

“Crispy on the outside, rich and savoury on the inside—these leftover meat croquettes are the ultimate Easter snack upgrade.”

Ingredients​

  • 2 cups leftover cooked meat (chicken, lamb, beef – finely shredded or minced)
  • 1 medium potato (boiled & mashed)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 green chilli (optional, finely chopped)
  • 2 tbsp fresh coriander (chopped)
  • ½ tsp garam masala
  • ½ tsp black pepper
  • Salt to taste
  • 1 egg (beaten)
  • ½ cup breadcrumbs

Method​

1. Mix the filling​

In a bowl, combine:
  • leftover meat
  • mashed potato
  • onion, garlic, chilli
  • spices + salt
  • coriander
Mix well until it forms a soft dough-like mixture.

Shape​

  • Take small portions
  • Roll into balls or oval croquettes
  • Slightly flatten them for even frying

Coat​

  • Dip each ball in beaten egg
  • Roll in breadcrumbs
For extra crunch: double coat (egg + crumbs again)

Air- Fry at 180°C till golden brown.​

Pro Tips​

  • Add cheese cubes inside for a gooey centre
  • Use leftover roast from Easter lunch for extra flavour
