“Crispy on the outside, rich and savoury on the inside—these leftover meat croquettes are the ultimate Easter snack upgrade.”
Ingredients
- 2 cups leftover cooked meat (chicken, lamb, beef – finely shredded or minced)
- 1 medium potato (boiled & mashed)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 green chilli (optional, finely chopped)
- 2 tbsp fresh coriander (chopped)
- ½ tsp garam masala
- ½ tsp black pepper
- Salt to taste
- 1 egg (beaten)
- ½ cup breadcrumbs
Method
1. Mix the filling
In a bowl, combine:- leftover meat
- mashed potato
- onion, garlic, chilli
- spices + salt
- coriander
Shape
- Take small portions
- Roll into balls or oval croquettes
- Slightly flatten them for even frying
Coat
- Dip each ball in beaten egg
- Roll in breadcrumbs
Air- Fry at 180°C till golden brown.
Pro Tips
- Add cheese cubes inside for a gooey centre
- Use leftover roast from Easter lunch for extra flavour
