Ingredients (4 servings)
- Whole chicken – 1kg
- Lemon – 1, halved
- Garlic – 3 cloves, crushed
- Olive oil – 2 tbsp
- Mixed dried herbs (thyme, rosemary, parsley) – 1 tsp each
- Salt & pepper – to taste
Method
- Preheat your oven to 200°C.
- Rub the chicken all over with olive oil, herbs, salt & pepper.
- Stuff the halved lemon and crushed garlic inside the cavity.
- Roast for 50–60 mins until the skin is golden brown and juices run clear.
- Let the chicken rest for 10 minutes before carving.
