Classic Home-Style Lemon & Herb Roast Chicken


Looking for a simple, tasty chicken recipe that’s easy to make and perfect for any meal? This Lemon & Herb Roast Chicken is a classic favourite that’s delicious, aromatic, and super satisfying.

Ingredients (4 servings)​

  • Whole chicken – 1kg
  • Lemon – 1, halved
  • Garlic – 3 cloves, crushed
  • Olive oil – 2 tbsp
  • Mixed dried herbs (thyme, rosemary, parsley) – 1 tsp each
  • Salt & pepper – to taste

Method​

  1. Preheat your oven to 200°C.
  2. Rub the chicken all over with olive oil, herbs, salt & pepper.
  3. Stuff the halved lemon and crushed garlic inside the cavity.
  4. Roast for 50–60 mins until the skin is golden brown and juices run clear.
  5. Let the chicken rest for 10 minutes before carving.

Serving Suggestion​

  1. Serve with roasted vegetables, mashed potatoes, or a fresh salad. Leftovers make amazing sandwiches or salads!​
