Ingredients
- 2 chicken breasts or thighs (cut into bite-sized pieces)
- 1 cup rice
- 2 cups chicken stock
- 3 cloves garlic (crushed)
- 1 small onion (finely chopped)
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 cup cream or milk
- Handful of parmesan cheese (optional but amazing)
- Salt & pepper
- Chili flakes if you like a little kick
Optional “comfort upgrades”
- Mushrooms
- Baby spinach
- Crispy bacon bits
- A fried egg on top
- Extra cheese because life is hard
Method
Step 1
Heat butter and olive oil in a large pan.Add onion and garlic and cook until your kitchen smells like you suddenly have your life together.
Step 2
Add chicken pieces, salt, pepper, and chili flakes.Cook until lightly golden.
Step 3
Add uncooked rice and stir for 1 minute so it absorbs all the buttery garlic goodness.Step 4
Pour in chicken stock.Cover and simmer on low for about 15–18 minutes until the rice is soft.
Step 5
Stir in cream and parmesan.Add spinach or mushrooms now if using.
Cook another 2 minutes until creamy and cozy.
