Creamy Garlic Butter Chicken & Rice

Today I read a Blog post on Langtrees.com
And it inspired me to share a comfort-food recipe that works for lazy nights, stressful days, cold weather, heartbreak, night-shift exhaustion, or “I just need something warm and good” moments.

The Important Part

Eat it in oversized pyjamas while pretending you’re in a movie where the main character finally has one peaceful evening.
This is one of those meals that tastes like someone cared about you — even if you’re the one caring for yourself.

Ingredients​

  • 2 chicken breasts or thighs (cut into bite-sized pieces)
  • 1 cup rice
  • 2 cups chicken stock
  • 3 cloves garlic (crushed)
  • 1 small onion (finely chopped)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cup cream or milk
  • Handful of parmesan cheese (optional but amazing)
  • Salt & pepper
  • Chili flakes if you like a little kick

Optional “comfort upgrades”​

  • Mushrooms
  • Baby spinach
  • Crispy bacon bits
  • A fried egg on top
  • Extra cheese because life is hard

Method​

Step 1​

Heat butter and olive oil in a large pan.
Add onion and garlic and cook until your kitchen smells like you suddenly have your life together.

Step 2​

Add chicken pieces, salt, pepper, and chili flakes.
Cook until lightly golden.

Step 3​

Add uncooked rice and stir for 1 minute so it absorbs all the buttery garlic goodness.

Step 4​

Pour in chicken stock.
Cover and simmer on low for about 15–18 minutes until the rice is soft.

Step 5​

Stir in cream and parmesan.
Add spinach or mushrooms now if using.
Cook another 2 minutes until creamy and cozy.
