My favourite fish is Barramundi which you find across the top of Australia - its a firm flesh type of fish, so its like a good steak. Can be cooked in a variety of ways and cuisines.

I believe I have mastered the art of cooking both Barramundi and Salmon. BBQ Oven and Pan
Never had a complaint and it just melt's on ya mouth.

The Frenchman not really a master chef, but I try.

I like the saltwater barramundi best over fresh water because so much more taste and texture. I know the difference straight away and know where it was from.

I enjoy fish straight from the river to hot coals of the campfire. Barramundi, Black Bream and Catfish along with fresh Crocodile, Mud Crab and Turtle. Prefer from the river that has access to the gulf country and not from fresh water.
