How do you guys manage screening clients to avoid certain ages groups or nationalities if need be? I have found this quite difficult to do without offending the client.

When you advertise just state it on your add, services only to.............. Age and Nationalities
Will you offend people? Yes but your preference.
Will this affect your future income? Yes but you are aware this may be the case.

You can always specify in your ads what services they offer and who they’re aimed at, it’s not offensive to indicate who you’ll give services to, it’s totally valid and acceptable.
When I go to find an escort for a sexual service, I always read the specifications carefully to know if it fits with what I’m looking for.
It’s a free market, anyone can offer and anyone can hire.
